For its first chef residency, Darley's welcomes Paul Farag. The creative chef explores his Egyptian cultural heritage through modern Australian cuisine, bringing North African and Middle Eastern flair to the Australian food scene.

The menu features a selection of four mezza and home-baked pita bread, plus a choice of main, side, and dessert, taking guests on a unique gastronomic journey set against the backdrop of the beautiful Blue Mountains.
