His cooking reflects a “fire‑to‑fusion” philosophy shaped by years across leading Queensland venues, now guiding The Tamarind’s evolution while honouring its Thai‑inspired roots.

Pocky

Pocky’s Daniel Jarrett brings a vibrant, street‑food‑influenced Southeast Asian style, shaped by his long-standing presence in the Sunshine Coast dining scene. Expect bright flavours, creative combinations, a fun, modern take on Asian cuisine that adds colour and excitement to the festival lineup.

Spirit House

Experience the aromatic, Thai‑driven flavours that have made the restaurant an icon. Under Tom Hitchcock’s leadership, Spirit House cuisine is known for its depth, balance, and beautifully layered aromatics. Expect food that feels transportive - rich in spice and fragrance.

Rice Boi

Rice Boi brings its unmistakable big, punchy Asian street‑food style to the festival, led by Head Chef James Fraser. Expect bold flavours, comforting textures, and the high‑energy style that has made Rice Boi a Sunshine Coast favourite.

Honeysuckle

Honeysuckle Buderim joins the festival with modern Asian cuisine shaped by Korean and East Asian influences, led by Chef Nathan Rumble. His food is warm, expressive, and beautifully balanced, blending tradition with contemporary Australian style.

Terms and conditions

Due to the nature of this event, dietary requirements cannot be catered for. This is an outdoor event that will proceed in all weather conditions. Tickets are non-refundable.

Transportation

Optional return bus transfers are available for $40pp, running from Caloundra, Mooloolaba and Noosa. A park 'n' ride facility will also operate from Maleny township, running continuously throughout the afternoon.

SEATING & ATMOSPHERE

Guests are free to wander the beautiful grounds of Spicers Tamarind Retreat, with food and beverage stalls set up throughout the property. The festival takes place outdoors under the sun, so we recommend bringing a hat, sunscreen, and comfortable clothing. You’re also welcome to bring picnic blankets or lightweight folding chairs to create your own perfect spot on the lawn as you relax and enjoy the day.

Accessibility

The venue offers full accessibility, with wheelchair‑accessible facilities and step‑free access throughout. Please contact our team for more information or special requests.

Sustainability

Mallow Sustainability will process all festival waste on the day, ensuring materials are reused wherever possible, from crushing oyster shells for farm use to repurposing food scraps and other organic waste.
